The Fab Paneer Dish : Paneer do Pyaaza

This north Indian dish is so popular that you can find in every corner of the world. The spices and ingredients used make this Paneer do Pyaaza recipe rich and delicious.

Ingredients required

  • Paneer (Indian Cottage Cheese) - 200 Gms
  • Onion (Finely chopped) - ¾ Cup
  • Finely chopped tomatoes / Curd - ⅓ Cup
  • Capsicum (Cut in Cubed) - ⅓ Cup
  • Cashews - 7 - 8
  • Oil - 2 - 3 Tablespoon
  • Cumin Seeds - ½ Tsp
  • Green Cardamoms - 2
  • Ginger Garlic Paste - 1 ¼ Tsp
  • Red Chilli Powder - 1 Tsp
  • Garam masala - ¾ Tsp
  • Coriander Powder - ¾ Tsp
  • Salt - ½ Tsp
  • Kasuri Methi - ½ Tsp
  • Water - ¾ Cup
  • For Tempering
  • Ghee or Oil - 1 ½ Tbsp
  • Small onions - Shallots - 12
  • Deseeded and sliced Green Chillies - 2

The Process to make Paneer do Pyaaza

1) In a mixer, add tomatoes, capsicum and cashews. Make a fine paste out of them. Keep aside.

2) In a pan, heat the oil and add cardamoms & cumin seeds.

3) Once they start to crackle, add onions and cook until golden brown.

4) Then add Ginger-garlic paste and continue to cook till the their raw smell goes away.

5) Next, add tomato puree and continue to saute on medium flame till the mixture starts leaving the pan.

6) Then add masalas like red chilli powder, turmeric, garam masala, coriander powder and salt. Cook until oil separates. Then add water and mix well.

7) Then cover the pan and cook the gravy until it thickens. You will be able to see the drops of oil on the gravy.

8) Time to add Paneer into the gravy. Put the flame to low.

9) Further cook for 2 to 3 minutes after coving the pan. Put the flame off.

10) In another pan, add ghee or oil, once heated then add green chillies and onion. Cook them on high flame for 1 to 2 minutes.

11) Then pour the green chilli - onion mixture over the paneer gravy.

12) Your Paneer do Pyaza is ready. Garnish with fresh coriander leaves and serve with the bread of your choice.
